March 28, 2024I have a friend with four kids who married a man with eight kids. She said that she was constantly running to the store for more groceries because it was hard for her to figure out how much and what to make! I think many stepfamilies (and families in general!) struggle at times with figuring out a meal plan / meals that work for their family regardless of the number of kids.
Through the years I have found that when I have a weekly meal plan, I feel greater peace because I’m not trying to figure out what’s for dinner a half hour before dinner is supposed to be done!
Here is our meal plan strategy and some of the Morris family’s favorite recipes. I hope you enjoy them. Bon Appetit!
Meal Plan Strategy
Sunday – Large meat (Ex: Roast or a turkey that you can use the leftovers for other meals during the week.) potatoes or rice, and a veggie.) Or prepare a favorite casserole meal the day before (lasagna, swiss chicken, shepherd’s pie).
Monday – Leftover meat or previously cooked meat in soup or in a burrito or enchilada with a side of fruit or veggies. (Examples: spaghetti, barley soup, nacho salad)
Tuesday – Taco Tuesday (We love tacos with a side of salad, or fresh or steamed spinach & carrots)
Wednesday – Fish night. (We like tilapia flavored with dill and salt, rice and steamed veggies)
Thursday – Leftover meat / previously cooked meat / beans in soup or stew or Mexican dish. (Chicken noodle soup, Chili, fajita’s)
Friday – Family Favorite (free day aka unhealthy!) (We love hotdogs, mac and cheese, and a mixed vegetable)
Saturday – Breakfast meal (We love to make breakfast burritos with a side of fruit – usually cut up oranges- and some steamed broccoli. Fast, healthy and delicious.)
