6 boneless chicken breast halves, trimmed of skin & fat
2 Tbsp. oil
14 ½ oz. can chicken broth
20 oz. can pineapple chunks
¼ cup vinegar
2 Tbsp. brown sugar
2 tsp. soy sauce
1 garlic clove, minced
1 medium green bell pepper, chopped
3 Tbsp. cornstarch
¼ cup water
- Brown chicken in oil. Transfer chicken to slow cooker
- Combine remaining ingredients. Pour over chicken
- Cover. Cook on High 4-6 hours
- Serve over rice
- If using an instant pot cook on high pressure for 30 minutes.
Delicious!! I found this recipe in a diabetic cookbook after our oldest daughter was diagnosed with diabetes. Healthy and yum for the whole family.
